At the Spring Tabletop Market showroom traffic appeared brisk in many places. Posses of buyers, the kind that signify a major retailer is in a buying mood, patrolled the halls of Forty One Madison and 7 W New York in April.

Like many food trends and preferences, juice seems to have circled back to its roots, but with a 21st-century twist. Consumers with an interest in gourmet foods have taken a high-tech route back to basics with butchering, fermenting and now juicing.

Private-label foodstuffs and kitchenware offer independent gourmet retailers unique points of differentiation that can build both brand awareness and customer loyalty.
