Alpine Cheese Collection

Schuman Cheese introduces The Yellow Door Creamery Alpine collection. It’s a new specialty line created by head cheesemaker Christophe Megevand who was inspired by the complex, extraordinary flavors of cheese from the Swiss Alps. Altu, which is cured for 180 days and is available in 22-pound wheels, was inspired by Gruyere; Monteau, which is cured for 120 days and is available in 22-pound wheels, was inspired by Abondance; and Valis, which is cured for 75 days, was inspired by Raclette and is available in 10-pound wheels.
